I put it in a large tupperware that is always in the freezer and from time to time throw it into a pot to make stock or a soup.

I prefer to cook just for myself, as then there are no left overs to waste. It's always when I make food for a whole group because people don't eat as much or someone doesn't show up or otherwise doesn't eat at all. I hate seeing things go to waste. Especislly if I paid for it.
