Trying to find a way to be able to chat at a distance with my kids when playing Minecraft together online.

I'm having a really hard time finding a privacy focused video/audio chat that isn't American or aimed at businesses.

Something like Signal would be perfect but they don't have a phone so yeah...

I tried to set up Jami but it's too difficult and it needs to be simple for them since the oldest is 10 :/

Matrix is my favourite, and easy to use, you just need to pick a client that supports it https://matrix.org/ecosystem/clients/ (Element is the most common) and create an account. You can also self-host if you want more privacy/control.

Signal has a desktop client, but sadly, it still needs a phone to work.

I also use Steam chat for playing.

A more direct alternative would be

  • Discord -> Revolt
  • Teamspeak -> Mumble
