Honestly the easiest way is just getting a Dolphinbar, It has the correct bluetooth adapter built into it. I got mine in the UK from eBay and after installing BlueZ and tinkering with some settings I got it to work perfectly with my launch model Wii mote + nunchuck.
I've only used it for normal Wii mote mode in Dolphin, But it has a mode to use it as a mouse + keyboard or generic gamepad.

This is what I ended up doing. Works well, got it working both with standalone Dolphin and through Retroarch easily, and it even has this fun mouse mode that is cool for my living room PC (but that I still rarely use).
With direct Bluetooth I did get it working fine in Dolphin, but the Bluetooth range on the wireless chip was so poor that it was unreliable from my couch.
Seconded on the Dolphinbar. If you switch it to mode 4 and you have an original wiimote it works natively with Dolphin emulator. Very straightforward setup and minimal tweaking. Best 30 bucks I've ever spent
