The whole food truck scene in Copenhagen is amazing and you can really get some amazing experiences.
Most of the foodtrucks on place like "Reffen" are super commercial, manned by untrained teenagers, so you'll need to know where to go.
If you want to try some authentic Asian-European fusion cuisine, I can really recommen you take the S-train to Albertslund, just 15 minutes from Copenhagen Central Station. There's a small autentic food truck called "Konya" that serves german-inspired Turkish food. The owners are all Turks and often go home to not only visit their family, but also to check out the Turkish food scene and get inspiration.
They are all super nice and friendly, and all related. A real "mom and pop" operation.
