Your kids will love crimping their own patch cables.
RJ45A, RJ45B, Crossover gives endless possibilities and hours of fun.
And for the older kids there's VLANs and BGP.
BGP is more a settlers of Catan style game, I would think.
With the occasional hostile takeover
