Alligator
It's best if ground up, like sausage or burgers.
Interesting, I've only had filets and fried nuggets. How's the taste and texture of ground alligator?
Maybe an unpopular one... but while I was in Iceland I had foal. You can get it at any grocery market there. It's without question the best meat I've ever had.

Duck but gator tail is a close second.

Rattle snake is pretty good from what I can remember. Like chicken, but... different
Stringy, sinewy, tough, but good at absorbing whatever sauce you put on it

I must have gotten some dehydrated roadkill snake jerky when I tried it
Mine was from one my dad killed in our yard. We then cooked it over bonfire that evening.
