Correct me if I'm wrong:

Like a "Smart" TV you can just not connect the car to the internet and ignore all the features requiring a SIM card or phone connection.

I'll just use a phone mount and ignore the infotainment shit entirely besides offline features if it comes to that.

I'll pull the dashboard apart and wire in a dumb radio/mount it somewhere.

I'd even find and destroy the antennas if I have to. I'll buy 3rd party ECU if I can't. Exhaust all options.

I can drive old cars too but eventually that gets unrealistic and hard to maintain.

Older cars is the key, something without electronic/network based maintenance systems

This is something I'm looking for also.. but extended to the max. It seems all EVs have to be feature packed. I don't want that. Give me an option to have manual windows, no central locking nor remote, and if the tire size is right, I won't even need power steering. A/C AND USB-A would be the only creature conforts wanted... Probably an EV converted beetle?

As a Honda owner, all their concerns are related to the Honda app, which requires a subscription. Since I don't use it: meh.

And there are still privacy features you can manage (and actually switch off) on the onboard computer.

Their judgement is entirely centered around an optional feature, so simply don't use it.
