last night for example, i was looking at the joinlemmy page, just lemmy.world went from like 400 to 1.3k in a night! hope it keeps up

Can I move my comments etc too? Any instance suggestions? Other than beehaw because I guess that's suffering in the same way

Well you can join any instance and still interact with the others. I'm on lemmy.ca and so far it's been stable. Think of it more like email than Reddit. Just because your on Gmail doesn't mean you can't email yahoo.
