I know that La La Land makes countless references to older Hollywood movies and they even showed clips from another movie. How do they get away with copyright by using movies from other studios?

That depends entirely on the clips that were used. A lot of popular classic films are in the public domain.

They don’t get away with anything. They licence the clips. As must you. Fair use does not cover use in fiction films.

Absolutely false. Parody exists and is covered by fair use.
