For the raisin haters: What if instead of raisins, you just had chunks of raw carrot?
I'm not even a raisin hater but raisins in carrot cake does not sound good at all. Give me walnuts or pecans.
Yeah, I've never liked them in a carrot cake. Most older recipes will call for both raisins and some kind of nut, but I've never had a problem leaving the raisins out.
I'll take all of the above!
