Cream. It makes it fluffier as it vaporizes in the egg mixture as it cooks. Try it sometime, it makes a big difference.

It makes them taste better and improves the texture, at least in my opinion.

Crepes are basically super-duper eggy pancakes.

You get fluffier scrambled eggs with a small amount of water. Milk holds the egg together more, so they get clumpy.
